The Stables

Opening Spring 2026

Our Victorian Stables are being transformed into a vibrant culinary destination in the heart of Sussex. The renovation will create a welcoming pantry, café and a stunning new glasshouse restaurant overlooking the reimagined Walled Garden, by renowned designer Ann-Marie Powell. Featuring ‘edimental’ plants that celebrate both heritage and innovation, guests will eat surrounded by the very ingredients featured on their plates.

Guided by nature
The menus will be nature-led, celebrating seasonality and the natural world around us. Dishes will use local ingredients, follow biodynamic principles, and include produce grown at Borde Hill’s Market Garden, respecting both people and planet. Every dish and drink will bring the garden to the plate and glass, offering fresh, delicious, and sustainable flavours with an ethos of ‘casual excellence’. The transformation includes:

• Restaurant Isca: featuring garden-led seasonal dishes in an elegant light-filled space.
• Edie’s Kitchen: hearty daytime dining for all the family in a relaxed courtyard setting.
• The Pantry: a farmhouse-style pantry celebrating seasonal produce from the Estate to take home – from homegrow flowers and biodynamic vegetables to pickles, wine, and bakes.
• The Workshop: a space for creative workshops, corporate away days, and special events.

The Stables will invite visitors to connect with nature, enjoy delicious food, and experience community in a beautifully reimagined historic setting. We look forward to sharing more information soon.
