A new culinary venture launching this Spring

Forever Curious, Rooted in Nature

Spring will see the launch of The Cordia Collective at Borde Hill, a new culinary venture led by Green Michelin-starred chef Chantelle Nicholson. The project will bring Chantelle’s regenerative ethos into the English countryside for the first time.

The Cordia Collective will be dynamic and multifaceted, championing locally sourced, seasonal food, while celebrating the rich biodiversity and plant heritage of Borde Hill and respecting the restorative power of nature, making a positive impact on the planet and people.

The project, much like nature itself, will continue to evolve, starting life as a micro-bakery café in the spring, before developing into a glasshouse restaurant, café and wine bar and workshop space in the former Stables in autumn 2025. Featuring a beautifully restored walled kitchen garden, with produce from the estate’s biodynamic market garden, The Cordia Collective will be the true embodiment of everything Chantelle loves, respects and enjoys.

Jay Goddard, Managing Director of Borde Hill says “I’ve admired Chantelle’s ethos and cooking for years and it’s so exciting to be collaborating with someone who shares such a similar mindset and values. Her passion for sustainability and nature align with our future vision and plans for the estate, and we are so thrilled to be welcoming in an exciting new chapter for Borde Hill.”

Ginkgo Coffee Shop

Open 10am to 4.30pm daily from the 15th February –  last orders at 4.00pm.

Nestled inside the Garden’s visitor entrance building, discover Ginkgo, serving barista coffee, specialist teas, and a selection of delicious homemade cakes, bakes and savoury bites.

The coffee shop’s name pays homage to Borde Hill’s rich botanical heritage and celebrates the magnificent Ginkgo biloba tree that stands tall along our main drive. Known as living fossil, it’s one of the oldest living tree species in the world, and is a breathtaking sight in autumn with a striking display of golden fan-shaped leaves.

Garden admission is not required to visit the Ginkgo.

We kindly ask for card payments only and warmly welcome dogs on short leads.

Ginkgo is available for out of hours private hire. Contact us at [email protected] to make an enquiry.
